Canyon Diablo Imperial Stout — 2 Gallon Kit
In 1853, Lieutenant Amiel Weeks Whipple was mapping the 35th parallel for the Pacific Railroad Surveys when he encountered a massive limestone chasm cutting 250 feet deep and 500 feet wide through the Arizona desert. He named it Canyon Diablo — Devil's Canyon — because its steep, impassable depths were a terrifying obstacle for everyone who encountered it.
When the Atlantic and Pacific Railroad finally reached the canyon's edge in the 1880s, construction halted for 18 months while engineers figured out how to bridge it. The idle railroad workers needed somewhere to go. The shantytown that sprouted up inherited the canyon's ominous name and earned a reputation as a place meaner than Tombstone — lawless, violent and short on patience.
It seemed like the right name for our biggest, boldest beer.
Canyon Diablo Imperial Stout doesn't apologize for what it is. Thick, rich and intensely complex, it's built from generous amounts of malt extract, black roasted barley, chocolate malt and caramel malt. At 9% ABV it demands your respect and rewards your patience — this beer benefits greatly from aging. Brew it now, forget about it for a few months, and open it when the moment calls for something serious.
No Temperature Control Required
Our kits use a specially selected ale yeast that ferments cleanly across a remarkably wide temperature range — all the way up to 94°F — with no special equipment or monitoring required. Pitch the whole packet and let it work. Brew in July or January and it performs the same way.
The Dry Malt Difference
Our kits are made exclusively with dry malt extract. It's more expensive than liquid malt extract but it doesn't darken or pick up off flavors with age and temperature the way liquid extract does. Fresher ingredients, truer flavors — that's why we've always used it and always will.

To brew this kit you'll need: An 8-quart or larger pot, the equipment in our 2-Gallon Starter Kit, and about 22 clean bottles. A kitchen scale is helpful too.
